Homemade Oatmeal Applesauce Muffins

Last Fall I canned applesauce. Apples are, hands down, my favorite harvest to process. Cooking applesauce is a simple task and it makes the whole house smell amazing while it simmers on the stove. It’s also really easy to create your own version of sauce by using a variety of spices and sugars. For economy reasons, I have never added sugar to mine but I will cook some batches with a measure of cinnamon in them. It’s certainly all a matter of taste and preference. In addition to my Blue Ribbon Oatmeal Cookies, these Homemade Oatmeal Applesauce Muffins are a great use of an abundant apple harvest!

When I bake, I try to use one bowl only. With a family of 6, there’s only so much room in the dishwasher and only so many hours in the day for hand washing!

First, combine all of the dry ingredients in a large bowl. This time, I used brown sugar, but sucanat tends to be my favorite sugar for this muffin. Check out my post on the five sugars I use the most in my kitchen here.

Add the wet ingredients: milk, applesauce and oil. Then combine with a spoon until it’s well incorporated but being careful to not overmix it.

I love to serve this with a thin powdered sugar icing on top! The applesauce and warm spices combine really well and remind me of fall harvest in the middle of a snowy winter day here on the Farm. The recipe is really versatile and it’s easy to add in nuts, apple chunks and other fruits to create a new recipe as often as you like.

Oatmeal gives these muffins a great texture and it is one of my favorite things about this muffin! The oatmeal makes it sturdy enough to put in my husband’s lunch box for breakfast the next day knowing that it will survive all of the jostling it will get riding around in work trucks and machinery floorboards! Seriously, guys, his lunch box even got run over at work one day! I’m not saying this muffin would survive that, but sending something that won’t fall apart in the baggie is definitely a concern!

Oatmeal Applesauce Muffins

Ingredients
  

  • 1 1/2 Cups Organic Oatmeal
  • 1 1/4 Cups Unbleached Flour
  • 1/2 Cup Packed Brown Sugar
  • 1 tsp Baking Soda
  • 3/4 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/4 tsp Cloves
  • 1/2 Cup Whole Milk
  • 3 Tbsp Avocado Oil
  • 1 1/4 Cups Applesauce

Instructions
 

  • Preheat oven to 350
  • Combine all dry ingredients in a large bowl until mixed evenly
  • Add milk, oil and applesauce to the dry ingredients stirring just until combined
  • Fill regular sized muffin cups to almost full
  • Bake for 17-21 minutes or until toothpick inserted in the center of one muffin comes out clean
  • Drizzle powdered sugar icing on a hot muffin before it's served
